Lacatation Cookie recipe for all the mamas and their support system. 🍪 Oatmeal Coconut 🥥 Chocolate Chip Lactation Cookies 🍪 4 Tbs water 3 Tbs flaxseed meal 1 stick butter (1/2c) - I use Organic Valley pastured butter 1/2 cup coconut sugar - I use Nutiva 1 large egg - I use Handsome Brook Farm 1 tsp. vanilla extract 1 cup oat flour (or do 1/2c oat flour and 1/2c gluten free flour) - Thrive Market and bobsredmill.com 1 1/2c oats (I use organic or non-gmo) 2 Tbs. brewers yeast - NOW Foods 2 Tbs. sunflower lecithin - @nowfoodsofficial 1 Tbs. maca root powder (optional) - Navitas Organics 1/2 tsp baking soda 1/4 tsp baking powder 1/2 tsp cinnamon 1/2 cup chocolate chips - Ghirardelli Chocolate Company cacao 1/2 cup shredded coconut
Instructions
Preheat oven to 350 degrees F. In a small bowl, stir the flax and water - set aside. In your mixer, cream the butter, sugar, eggs, and vanilla on high until cream. Stir in the flour, yeast, lecithin, maca, baking soda and powder, cinnamon, and flax mixture on low. Fold in the oats, chocolate chips, and coconut until mixed evenly. Scoop and roll into balls then place on a baking sheet lined with parchment paper. Use your palm to flatten each cookie dough mound. The cookies will not spread much during baking so use your own preference to flatten to your liking before baking. Bake for 10-13 minutes at 350° until the edges are lightly brown. Store in a covered container.
